Mini Banana Muffins

Comments: I should write up a recipe for these as they were really low fat and came out to I think 53 calories each (I should have kept that darn spreadsheet!). They have flax seed, whole wheat flour and of course apple sauce instead of oil. The next day they were nice and moist. I generally don't make mini anything since I only have one mini pan. Maybe I should invest in more!
Remarkable Rhubarb Bites

Comments: Yes, I know I get a lot of recipes from this site. I've just found it to be a really easy and good community. Most of the recipes are spot on. Of course I made these vegan by subbing the egg and they turned out really great. I made them for mother's day as well as for some of my knitting friends. They were inhaled by people who claim to not really like rhubarb. Score one for the weed I'm trying my best to grow in my backyard! They are like a cakey blondie. Very moist and tasty.
S'mores Granola Bar

Comments: I made these with margarine and had to add a lot of water to get these to hold together. Also, I think I would have preferred the marshmallows and chocolate chips throughout rather than in the center and it might of helped holding them together. But can I talk about the marshmallows? OMFG comes to mind. These are Dandies from the Chicago Soy Dairy. The marshmallows are amazing and look at that melt! The taste? Well, they don't taste weird or off. In fact, I think they taste better than regular stay puffs. Not so...stale right out of the package. My husband brought these to work and they were inhaled by the masses. I had one and deemed them good, but I need to try a better marshmallow recipe to feature these darlings.
Baguettes

Comments: These turned out pretty good considering. Considering what? Well, my husband woke up while I was in the middle of the first rise and decided he wanted to go on an all day shopping trip. So I formed them into baguettes and popped them in the fridge. Then I took them out that night, let them rise a bit when getting back up to room temperature and popped them in the oven. I was trying to get more holes and such, but well, that didn't happen. They were still tasty though.
Banana Chocolate Chip Bread Pudding

Comments: Oh hello. This was amazing. We had it for brunch and then a few desserts after. It was good reheated as well. I used homemade bread so that could have been part of it, but definitely give it a try. I've never seen my husband eat something really after the day it was baked, and he went back on his own for this.
