French-Style Country Bread

Comments: What a great recipe. The starter was easy and I learned the best tip. Add 80% of your flour and then let it sit about 12 minutes before adding the rest. I finally got that nice smooth elasticy texture! Wish I had more air bubbles, but pretty darn good for this try. It made for an excellent sandwich and perfect for nutella!
The Best Apple Pie Muffins Ever

Comments: The husband wanted the banana crumb topped muffins, but I didn't have any bananas. So I had apples and made these vegan. He loved them and said they were very moist. I didn't get one and he inhaled them in record time. Also, it is really easy to half a batch when you are making them vegan with egg replacer! Half an egg is never a problem ;)
Cinnamon Raisin Bread

Comments: I was so upset when I found out I took this out of the oven a few minutes too early. I didn't judge the browness correctly, but let me tell you it tasted wonderful. After it sat a day on the counter, it really took on a dense bagel-like texture which was very nice. I'll try it again sometime and see if it gets that texture when it is fully cooked! Maybe make it into rolls.
Vegan Strawberry Kake

Comments: Lets just say my inlaws actually gave me compliments without dragging them out of them! I am still practicing the whole decorating thing, but this one turned out better than usual (which doesn't say much). It was pink all the way through, and the creme de cassis in the cake batter really makes a difference. Don't leave it out. A nice change from chocolate cake and it was perfect for Easter.

Comments: Beware, this is easy and addicting. Using a nice quality chocolate makes it so much better. Also, did I mention addicting? They keep really well in the fridge, if you can keep them that long. They are kind of dull looking because I took a photo from them coming directly out of the fridge. It seems to be a comfort food for all people as my coworkers were talking about having this made non vegan and with saltines as a kid. Either way, mine got inhaled!

Simple Crusty Bread

Comments: UGH. I didn't trust myself when I was making this. It said it was going to be a loose dough. Well, it was so loose it was like cake batter. The recipe didn't describe what loose was. In fact, I had to pour it into a casserole dish (and I still did this anyway, because I was in a trusting mood). I never got the inside fully done however it is still edible. I think it needed to heat up a few more degrees. Anyway, I'll eat it myself, but I will never try this one again. There are so many other recipes out there that I just don't want one that bombs so easily. I have The Bread Bakers Apprentice and now I understand why it bombed so I'll just stick to that and trusty King Arthur Flour recipes.
Chocolate Coconut Macaroons

Comments: Another easy recipe. I made these while I was waiting for dinner to cook. So tasty too. It took a few minutes to get people to try one, but the taste really won them over. It could have been my expensive chocolate I used too! I used regular oats and it just made them a tad chewier. My coworker said they tasted just like mounds. I'm fine with that!
Classic Sandwich Bread

Comments: Hell yes this was good. Very easy bread to make. I subbed 1 cup bread flour in there, and next time plan to sub in some whole wheat. I used margarine and almond milk to make it vegan and it still turned out really good. I highly suggest this as a first bread recipe.
Healthy Vegan Muffins

Comments: Meh. I mean, they were edible but they were not what I or my husband wanted. There is not nearly enough mix ins in the recipe. I swear there were a few muffins with 1 raisin. That is as pathetic as store bought. Probably won't get made again.
Carrot Cake Cupcakes

Comments: I've made these before but never put them up on the blog. Whoops. They aren't my favourite recipe, but honestly I haven't found one I love. I topped them with vegan cream cheese frosting and they were inhaled at work. I do think I need a better cupper recipe, one that has a lighter cake that domes a bit more when cooked. Also, it was hard to get 12 cupcakes out of this batter.
