Comments: I wanted something without "fake" sugar and this fit the bill. I used Tofutti cream cheeze and margarine. I did 2 variations, one with just agave nectar and almonds and the other was sugar free raspberry jam with almonds. Both turned out really good, but it is a good thing I removed them right away from the baking sheet or the agave nectar that seeped out would have glued them there permanently after they cooled. I like em, yum!

Comments: I used the eggs this time because I had some, but next time I might try to veganize them. They turned out SO good. I was baking for a diabetic, and I think the non-diabetics enjoyed them more! Yum! I had unsweetened coconut, which made these perfect.

Comments: This is my husband's favourite cheesecake. He requested it for his birthday (Oct 5th) and he got it. I used Tofutti cream cheeze this time around (I don't like cheesecake anyway) and he said it was the lightest and fluffiest I have ever made. Good sub in my book! I still used the egg, but next time I'll try with something else if I'm adventurous.

Comments: Okay, these aren't Vermont cookies, they are Canadian, as I only use Canadian maple syrup. A tribute to my homeland ;) They turned out pretty good and were a nice change from the standard cookie repertoire. I brought them in ages ago when I was new at work, and made a few friends! I can't remember if I made them vegan or not, I made them so long ago.
VERMONT MAPLE CRACKLE TOP COOKIES
1 c. shortening
1 egg
1 tsp. vanilla
2 tsp. baking soda
1 c. brown sugar
1 c. Vermont maple syrup
4 c. flour
1/2 tsp. saltCream shortening and sugar. Add egg, syrup and vanilla.
Add dry ingredients. Beat until blended. Chill. Shape into
balls about 1 inch in diameter. Roll in granulated sugar. Bake
about 10 minutes in 350 degrees oven.

Comments: Really easy, and I veganized them too. Oh, and they are quite filling. I made these for my husband for breakfast, but I ate quite a few myself. You could even cut the recipe in half honestly or just be sure there are more than 2 of you to eat them all. A very good balance of spice and oatmeal, and a good sweetness to them. These will go into regular rotation. Oh, and say hi to my new plate!

Comments: Yep, I made it vegan. The icing inbetween was my flopped chocolate buttercream frosting. I have no idea why it flopped, but it wasn't spreadable and easy to work with so I stuck it all in the center and then covered the whole thing in chocolate ganache. So the sides and top wern't ganache perfect, and it looked pretty bad so I covered the sides with toasted pecans. All in all a decadent birthday cake for my brother inlaw (made Sept 10th, whoops!). That was my piece. It was good ;)

Comments: Um. Amazing. I made these for our general contractor friend who was over on Sunday helping us again with our "built-in" that still isn't done. He has about 32 sweet teeth. These were easy and good, but took a bit of time. However, the recipe for the coconut creem cheeze icing makes a LOT, so I had about half left over. Fortunately, it tastes amazing out of the fridge spread on a graham cracker as a treat. I pretend it is creem cheeze and justify it that way. The coconut extract and coconut seems to take the tang out of the creem cheeze, but it is really really good. And I'm trying not to eat the whole tupperware full of icing in one sitting. I don't even have a huge sweet tooth!

Comments: I gave up on the photo, sorry. I made these last week. DH loved them, I thought they weren't blackberry enough. Oh, and I made them as soon as I popped out of bed (he needed something for breakfast) so I squished the berries in my half asleep state. He did eat them all eventually, but they were not as good as either the blueberry or strawberry ones I've made in the past. It was just the berry choice not the recipe however.

Comments: This one was worth the 2 photos ;) This turned out really great. I had last minute notice of company coming for dinner so I tried this great recipe. I did veganize it (soy milk, margarine, egg replacer) and it still turned out great. I'm sure that it would be even better the next day, but my guests requested to take it home they were so impressed!

Comments: Finally got to them! They were for my husband's coworkers birthday. They rocked. The icing was a hard consistency to pipe, I had to add WAY more water than called for. Hrm. The photo was from directly out of the fridge, so they didn't shine up well until they had sat for awhile.
