Comments: I truely thought this didn't turn out. I made 1.5 batches of cake batter (vanilla cupcake batter) and split it into 6. There just wasn't enough, so I ended up with 6 pancakes. Then I put too much coconut in the frosting and it was too thick. Did I think to thin it out? Nope. So I had issues frosting the damn thing so I stuck coconut all over the top. Hah. Anyway, it was a hit at the bbq I went to and everyone was impressed. It tasted good too! Took forever though since I only have 2 cake pans I like to use, so not sure it will ever be made again. Also known as... a pain in the ass!
Caramel-Cinnamon Crunch Icebox Cookies

Comments: My husbands new favourite cookie. I veganized them with margarine, egg replacer and agave nectar. They are a pain in the butt to make, but they are truely delicious. I won't make them all the time, but they will get made again. I think my husband might ask for these as a birthday treat instead of pumpkin cheesecake! Well, maybe ;) Even I liked them and I used the nuts!

Comments: What a bitch, but so worth it! I veganized them and didn't have any orange zest so I added vanilla. SO very good when you use a higher quality chocolate. It made a lot more than 60 for me, but I didn't count. I was too busy shoving them in my mouth. It took a whole pound of chocolate to coat them, so if that gives you an idea of how many, good. They make a great gift... if you can get them out of the house. I didn't do any with toppings because after dipping so many I got tired.

Comments: Okay, I didn't make these spelt. I don't have any spelt flour currently (I have a gluten free mix but that is it). My husband liked them a lot but said they were a bit mushy. It was all the peaches really. I probably put too much in, and I know I undercooked them a tad. Oh well, still edible!

Comments: Okay, love. However, I totally FORGOT the damn sugar. There was enough chcolate chips and marshmallows through the mix that I had a hard time telling if I added it or not. I'll make again with sugar and I'm sure they will be excellent. Great fudgy brownie recipe. The marshmallows: still rock.

Comments: These turned out SO good. The best dough consistency yet. They were wonderful warm and just as good cold. I even used the leftovers as hamburger buns, though it wasn't the best match. I highly recommend this recipe. Yum!

Mini Banana Muffins

Comments: I should write up a recipe for these as they were really low fat and came out to I think 53 calories each (I should have kept that darn spreadsheet!). They have flax seed, whole wheat flour and of course apple sauce instead of oil. The next day they were nice and moist. I generally don't make mini anything since I only have one mini pan. Maybe I should invest in more!
Remarkable Rhubarb Bites

Comments: Yes, I know I get a lot of recipes from this site. I've just found it to be a really easy and good community. Most of the recipes are spot on. Of course I made these vegan by subbing the egg and they turned out really great. I made them for mother's day as well as for some of my knitting friends. They were inhaled by people who claim to not really like rhubarb. Score one for the weed I'm trying my best to grow in my backyard! They are like a cakey blondie. Very moist and tasty.
